Want to hang on to today's warmth for just a little bit longer. Not quite ready for the impending cold and a crisp, bitter salad from what was left in the fridge suits my mood. Radicchio keeps well and I buy it whenever it's around, but its a tough salad leaf to love. Needs a careful hand. Dump the feta if you like - it's only 50g - in which case you should double the quantity of avocado.
bitter salad for a sunny afternoon
make a dressing in a salad bowl; a thick one of cider vinegar, olive oil, and dijon mustard. season. whisk. sprinkle in 1 teaspoon of sugar.
shred 1/2 head of radicchio leaves and thinly slice a bunch of radishes. chuck into the bowl and toss with your fingers. leave for a few minutes, then add a handful of rocket, toss again. slice 1/2 avocado over the bowl and crumble 50g of feta over the top. keeps for about an hour or so.
