The Cardinal Sin, I am told, when muffin-making is the Over-mix. A shaggy, lumpy batter, barely held together, makes for light, delectable muffins. As opposed to the leaden hockey pucks I made last time 'round.
These luscious little cakes proved to be just what was needed to get my bum into gear, kitchen-wise.
The only change I made to AOF's recipe was to substitute 30g (1 oz) of macadamia oil for the molten butter. As someone not in possession one of those microwave-thingies, melted butter can prove to be a bit tricky.
Need to find me some more blackened bananas, quickly. They're that good, people.
Oh, but the action and sensation of mixing can be so satisfying I can't help but overmix. Anyway, Macadamia oil--interesting.

Got some macademia oil in the fridge (well obviously as I just blogged the contents of said fridge) so will give it a go next time.
I have no evil kitchen heating device either, so I just melt the butter in a little pan and use the the liquid butter left clinging to the sides of the pan to mop up with some kitchen paper and grease the muffin tins.

I have walnuts! Fresh ones drying in the airing cupboard. Perhaps by the time they rattle, I can make a banana blacken. Just by glaring at it. :)

The kind of recipe I absolutely love--and dried cherries! Yay! Never tried macadamia oil but boy, does it sound heavenly. :)
