One fat carrot, just the one, shredded. Four unsulphured apricots, snipped into little pieces.
Tossed with mustard seeds, popped in a little oil, some ground coriander, a chilli, seeds 'n all, sugar and tahini.
The very reason I kept the Colin Spencer books by my side.
Almost there. Phew.

I LOVE carrot salad, but I don't thik I've ever had it with apricots. Usually I've seen it with pineapple, but I'm a big apricot fan, so this version looks great! I'm looking up Colin Spencer right now!
