Rice pudding seems to be one of those things you're obsessed about or completely disinterested. I've made a few versions over the years but I've never baked it, that must be a very English version of the pudding. The last time I made it for a dinner party desert I made a huge pot of it and all the adults loved it but none of the kids would eat it so I haven't made it since.

I've been very blessed not to have been scarred by below-than-average rice pudding. The Indian equivalent of this delicious dessert is kheer, and that's what I grew up with. I can recall my mother standing for hours on end, lovingly stirring the pot with raw milk from the cow in the back yard, sweet spices and almonds that she had blanched and slivered herself that day. I must thank her for this that as an adult I can now only appreciate. Thanks for reminding me! (P.S. loving this baked version, less werk!) Lesh xx
